Wired For Wine:  Stop what you're doing winelovers, and focus your undivided attention on this utterly delectable, showstopping Andrew Will Champoux Cabernet Blend.  Our hearts are hammering at the thought of this bottle sitting on our holiday table.  Start the wowing right out of the gate with generously poured glasses and a duck terrine with red wine-glazed shallots.  Now our mouths are watering... This dark, rich fruit,  Asian spice, leather, floral and sandalwood notes leading up to the silky finish of this sophisticated Cabernet blend make it an obvious pairing with lamb, meats, venison and a hearty pheasant dish alike.  Roast lamb with a cherry tomato and spinach tart on the side will exceed any and all expectations you may be entertaining.  Pan-seared beef tenderloin with a red wine/morel sauce will do very nicely with this Champoux too.  For the elegantly earthy side of this Andrew Will, we recommend braised veal shanks with white beans, tomatoes and rosemary.  Your taste buds might just write you a thank you note!  Keep the diners happy for a little longer with a newly filled glass and a deep, nutty French Tome de Chalosse cheese.  "Succulent, plush, pleasure-bent"...
