As you get acquainted with its cherry and floral notes, pinch of spice and cedar and rich, solid tannins, keep in mind that this Piedmontese prince is made for meats and game, braised and stewed especially, mushrooms, risottos and much more. The hands down first choice in our house for comfort food is fork-tender pot roast with creamy garlic mashed potatoes and skinny green beans tossed in rosemary butter. Oh yeah, don't forget the extra gravy! This Azelia could just bump up that comfort to euphoria... If you're feeling fancy, go all out with risotto with leeks, shitake mushrooms and white truffles. Ridicolo delizioso. If you've got a bit of Elmer Fudd in you, another great choice is what they refer to as "hunter's rabbit" on Ischia, an island off the coast of Naples.
