Our professional advice is: stock up on this Bearboat Russian River Chardonnay. Its crisp acidity, stony minerals, gorgeous array of fruit and suggestion of vanilla and oak will be sumptuous with so many choices, we're not sure we could count them all... Let's start with opening a chilled bottle and serving it with grilled scallops with Mexican corn salad sprinkled over the top. Caramba! As for the entree, this Bearboat Chardonnay is a natural with chicken, most any creature from the sea, white fish, vegetables, herbs and more. If you're serving a crowd, one of our favorites is a big pan of shrimp fried rice with coconut and pickled onions. The coconut goes particularly well with the whisper of oak in this California white. A great twist on a classic is a grilled salmon BLT. The salt of the bacon is perfect opposite the fruit in this Russian River white, and the dry character and crisp acidity never met a mayonnaise it didn't like... Chicken francaise, sauteed to a beautiful golden brown, is another near-flawless option. All you have to do now is decide. Instead of cheese, we're in the mood for more of a dessert. The apple in this wine will be a fitting companion for individual apple-chestnut crumble cakes. The chestnuts add a certain fa la la to the party, and a generous scoop of vanilla gelato on top, well, need we say more?
