We say sip your first glass with butternut squash, ricotta, sage crostini. A big platter of fried calamari would be to shabby either. As for the entree, the lush light fruit and citrus, mineral flavor, whisper of honey and all-around deliciousness allow it to work well with everything from salads to antipastos, chicken, roast pork, white fish, shellfish and more. We crave it with southern fried chicken next to smoky pancetta/chive biscuits. Be sure you've got one bottle on ice and another in the fridge... A steaming platter of linguine alla vongole (white clamsauce) is another great briney, garlicky partner for this Pinot Gris.
