Winery: "A blend of indigenous grapes, grown on three different soil types, each giving a unique character. Shallow slate-based soils tend to give more aromatic grapes. Sandy granitic soils maintain bright acidity. Alluvial soils clay, lime and loamy at the lowest elevations give wines with rich textures.
Each varietal is harvested and fermented separately. Grapes are de-stemmed and immediately pressed prior to fermentation in temperature controlled stainless steel tanks. The wine is aged with fine lees for 3 months prior to bottling."

Let the pleasure begin with your first glass and an aromatic platter of chicken and scallion potstickers with soy ginger dipping sauce. The lovely dry nature, minerality, floral and white fruit notes of this Spanish Rua will work well with chicken, fish, seafood and vegetables alike. We love the light-colored fruit notes with scallop brochettes and a mango-tarragon salsa. The floral nuances are glorious next to sweet-and-sour tangerine chicken stir fry. Be sure and make a big batch... The wow factor for a small group or a crowd is poached salmon with shrimp in a cream sauce. Maybe grate in a little lemon zest for the perfect finishing touch. After you've had a moment to catch your breath, pour another glass to go with a slice of lemon pound cake with sugared berries and a drizzle of creme anglaise. The dry minerality of this Abanico will dazzle opposite the moist pound cake and creamy sauce. If savory is your preference, then sip that newly refilled glass with a creamy, soft French brie.
