One of the most dramatic revelations in my California North Coast tastings was the resurrection/renaissance of Beaulieu Vineyard, one of the historic names in California winedom. This was the source of some extraordinary Cabernet Sauvignons in the fifties, sixties, and early seventies, but the winery fell on hard times and was sold (it is now owned by the gigantic Diageo company). However, they have come back with a vengeance over the last few vintages. Michel Rolland, the brilliant wine consultant, was brought in to help resurrect the Private Reserve program, and it appears his magic has spilled over onto the other wines as well." If you're drinking it now, our favorite choice for this velvety beauty is Mario Batali's grilled lamb chops with garlic confit and mint (click here for recipe). Next to them, nestle some eggplant involtini, thin slices of eggplant, wrapped around ricotta, egg and spices, which are then baked in a tomato sauce. They will be perfecct for the gentle smoke and the spicy oak of this Private Reserve Napa Cab. This is a robust meal, which is the least that this Georges de Latour deserves. If you prefer a different meat, this opaque purple diva warrants a special trip to the butcher for some thick, marbled steaks of your choice. Grill them the way you like, and serve them with a rich sauce like Béarnaise, next to potatoes your favorite way. They will bring out the strong, smooth tannins, and you won't believe your taste buds. If you have any room left, we suggest a slice of dense bittersweet chocolate tart sprinkled with toasted pine nuts. The savory alternative is not for the cheese faint of heart...
