The 2004 was rated as Excellent, extremely well made and highly recommended with this review: "Ardingo (Merlot and Cab) shows off its true potential in this vintage thanks to pristine aromas of cherry, chocolate and espresso. The Merlot side of this delicious blend allows it to work well with pork as well as the tried-and-true lamb, beef and steak which traditionally accompany a Cabernet. With the Calbello Ardingo on the table, you are well on your way to the wow factor. How about a crown roast of pork? Che bello! You cannot go wrong with a delightfully rich Bistecca alla Fiorentina either. The closest you will find to that cut here is a Porterhouse. Its charred edges will mirror the sweet, chewy tannins gorgeously. And finally, we love this velvety Super Tuscan with roasted calves liver with bacon, wild mushrooms and a creamy polenta. Before or after your entree, be sure to have a glass with some Pecorino Toscano Stagionato, a century-old table cheese from Tuscany. Magnifico!
