Founded in 1892 by French wine pioneer and ancestor Emilio Bouchon, Casa Silva is now owned by Mario Silva and family - the fifth generation of winemakers. Many of the vines planted are over 90 years old, carried over from Bordeaux, pre-phylloxera, by the first generation. Previously selling their juice to larger, bulk wineries, Casa Silva began a bold, estate bottling program in 1997. Now, the Silva Family are viewed as leaders of the new generation of premium wine producers, and their wines have received international acclaim. Wired For Wine: This Casa Silva Carmenere Reserva is a wonderfully versatile and food-friendly red. And, at this price, it is a must try for these last several weeks of summer cooking... Your first bottle will pair beautifully with a big platter of eggplant Parmigiana bites. The myriad of flavors beginning with balsamic, to black and red fruit, herbs, spice box, oak and white pepper, along with good acidity and full tannins allow this Casa Silva to accompany everything from lamb, beef and pork sausage, to duck, rabbit and moderately spicy Indian curries. Our first choice is a Chilean favorite, Pastel de Choclo, a corn and meat pie. If you're in the mood for something a little more European, we suggest roast duck with sausage and lentils. The herbs and sweet French oak in this Reserva will come alive with this dish. The pepper and lovely fruit in this Carmenere are terrific with your own chile con carne.
