Wired For Wine:  We all probably know someone who is assertive and showy, but how often do they also manage to be harmonious as well?  So much better to have those qualities in a stunningly delicious bottles of wine...  Prepare to be wowed by your first sip of Caymus Cabernet Sauvignon.  Follow that first sip with a couple of curried lamb samosas with a cranberry-apricot chutney, and you will feel the rich, ripe red fruit of this Napa Cabernet warmly envelope you.  A pedigree like this one, along with a masterful mix of earthy coffee and oak, vanilla and other spices and chiseled tannins requires hearty, meaty fare as a companion.  An autumn stew of beef and venison topped with a browned biscuit crust will is a great choice.  The full body of this Caymus red is also terrific with slow-cooked Kobe beef short ribs.  If you can stand the wait, the result it worth it.  And if you're planning ahead, this wine is a must for a holiday standing rib roast with horseradish sauce.  It will open up the spice and really bring together the many lovely layers of this California Cab.  Give everyone a moment and then fill their glasses again to go with a Swiss Scharfe Maxx cheese.  It is firm and powerful, with tangy, meaty notes and a smooth touch of creaminess.  Hold out those glasses, winelovers!!
