Chalk Hill Estate Red 2007
Robert Parker, Jr., Wine Advocate: Rated as An outstanding wine of exceptional complexity and character. "Perhaps the finest Estate Red to date is the 2007. Its dense ruby/purple hue is followed by blackberry, cassis, cedar, and licorice characteristics, supple tannins, a more accessible personality, full body, and admirable purity, texture, and length. Drink this beauty over the next 2-3 decades." Feb 2010
Wired For Wine: This stunning Chalk Hill Proprietary Estate Red has fantastic pairing versatility. It will do very nicely with beef, steak, duck, lamb, and even grilled salmon. Pour a deep purple glass and get the meal off and running with a platter of carpaccio of beef, sprinkled with peppery arugala, shaved Pecorino and some luscious olive oil. Not a bad start... If you're having it with the entree, our first choice with this Estate Red would be lamb chops in a crisp potato crust. Click here for the recipe. This dish is such a showstopper; all it needs is simply grilled tomatoes and eggplant to gorgeously finish the platter. We love the sensuously rich dark fruits of this intense Chalk Hill juxtaposed against the delicious char of well-marbled steak. The supple tannins will play perfectly with that same char. Another great choice with this Meritage is a grilled salmon filet with delicious tarragon sauce and some silky mashed potatoes. If you've saved the split for an after-meal course, we say serve it with a distinctively earthy French Le Moulis cow's milk cheese. It's buttery flavor is heavenly. What'll it be winelovers?
