You won't need an accompaniment for the full body and gorgeous fruit in this fantastic Pomerol. If you need one, a bowl of roasted hazelnuts with thyme will do nicely. The lovely tannins, terrific structure, dark fruit and whisper of minerals make this Haut-Surget the perfect partner with lamb, beef,game birds and so much more. Our first choice is grilled beef tenderloin with red wine and marrow sauce. A classic favorite would be roast lamb with rosemary-pesto orzo on the side. With winter winding down on us, you might want to whip up some roast squab with porcini and country bread salad. Everyone will want another course, so open that second (or third) bottle and serve it with a ripe French Camembert cheese. The stinkier the better! How's that terrace treating you??
