At this price, you are going to want to stock up (see Parker review above...) The terrific acidity of this California white will dazzle with crisp crab/pork spring rolls. As long as it's not hearty and meaty, this Petite Etoile ("little star") hasn't really met an appetizer it didn't like. The gorgeous citrus, melon, nectarine and kiwi fruit notes, beautiful acidity and minerality, sweet smokiness and whisper of spice on the finish qualify this Chateau St. Jean to pair well with everything from fried chicken, seafood, pork, herbs and vegetables, and one other thing. Oh yeah: TURKEY!! We're thinking of doing an herb-roasted one with a rich shallot pan gravy this year. Olive oil poached salmon and asparagus is another great choice. And if you're in the mood for pasta, make it grill-roasted linguine alla vongole (with white clamsauce). Be sure and have a couple of extra bottles standing by because they're going to want a last course. Make it your favorite chevre to play up the beautifully chalky minerality in the wine.
