Conundrum’s success as a unique, complex blend of white grapes from California continues with the 2008 vintage in this fresh, lively, deeply-flavored wine. This is the first vintage to be produced at the new production-only Conundrum winery in the Santa Lucia Highlands of Monterey County. Our wine’s core profile remains thoroughly Californian, with Sauvignon Blanc grapes from the Napa Valley, Muscat Canelli from Tulare County on the Central Coast, and Chardonnay and Viognier from our vineyards in Monterey County. The “puzzle” of Conundrum lies partly in guessing the range of grape varieties we use, because we never reveal its exact composition. About one-quarter of the wine lots were fermented in stainless steel in order to preserve their individual fruit characteristics. The remaining lots were fermented in a combination of new and seasoned oak barrels for up to ten months." Wired For Wine: Fantastically drinkable. That's what we have to say about the Conundrum white blend. A variety of grapes have been masterfully interwoven to create a complex yet balanced white with gorgeous, deep fruit and delightfully fresh acidity. Fish, chicken and pork alike will work well with the Conundrum. Fish and shellfish are our first choice, so we recommend kicking off the eating with an appetizer of lump crab cakes and celery root remoulade. Or, the delectable fruit in this white will set off a sweet-and-spicy Asian sauce beautifully when it's tossed with red peppers and calamari. An entree we look forward to with the Caymus is chicken done on the grill with a white wine, apricot and scallion marinade and glaze. The floral and fruit notes combined with the rich, supple texture of this blend are able to take some gentle heat. If you're bringing in takeout, have it with an Indian chicken curry dish. We find that as we pour our last glass or two, we are in the mood for something sweet. The lovely texture and rewarding finish of the Conundrum will wow you with a decadent banana Napoleon.
