Savor your first glasses with your favorite antipasti and salumi.  As for the entree, this powerful Piedmontese's earthy notes of smoke and toast, dark fruit, intense energy, clean minerality and long finish make it and ideal selection with red meats, braised chicken, simple pasta dishes and much more.  Our top suggestion is veal shanks with balsamic onions and white beans. Slightly heartier and equally delicious is an Italian red wine brasato of beef with glazed root vegetables.  For the smokey side of this velvety Dolcetto, we prefer bucatini with onion, bacon,  and tomatoes. Vero delizioso. Open another bottle to go with an Italian Pecorino Maschio cheese. Who doesn't love a voluptuous finish??! Mangiamo winelovers!
