Winery: "Dark crimson hue in the glass. Aromas of cassis, with subtle oak and sage tones. Medium-bodied, with balanced acidity and manageable tannins. Brimming with sweet red fruit flavors underscored by toast and caramel notes."
Wired For Wine: Named for the Titan goddess of the dawn, Eos, who with "rosy fingers" opened the gates of heaven so that Helios, her brother, the Sun , could ride his chariot across the sky every day, we bring you our first selection from Eos Estate in Paso Robles. It feels like a new day beginning when we sip our Eos Estate Cabernet Sauvignon... Enjoy your glass with Asiago-stuffed dates with bacon and smoked paprika, and you will feel the warmth of the sun too. At this price, you might just want to stock up a bit. The beautiful body, lovely red fruit, oak, toast and gentle tannins make this California Cab the ideal partner for beef, lamb, roasted game and many other choices on the hearty side. We recommend roast squab with porcini and country bread salad. Or, you can bring out the herbal notes in this Eos with a delectable wild mushroom risotto. A black pepper, spice-rubbed beef tenderloin on the grill will showcase the soft tannins of this Central Coast red quite nicely too; all you have to do is decide. When you've had a moment, open another bottle and savor a little more of this delicious Cab with an English Wenslydale cheese. Let the sun shine in, winelovers!
