In 2006, a cool, wet spring gave us a late start to the growing season. Summer was mostly cool with some heat spikes, ideal for Napa Valley Cabernet Sauvignon. Harvest came a little late following some warm and cool spells in August and September, and moderate weather during harvest allowed for fully ripe, intensely flavored fruit. At harvest, the grapes are double sorted and crushed at Quintessa, and then cold macerated and fermented in oak and stainless steel tanks."

Wired For Wine:  A cousin of the powerful and pricey Quintessa Cabernets, the Faust Napa Valley Cabernet Sauvignon is  a deliciously dense red with notes of vanilla and cedar which will envelope you in its wonderfully luxuriant finish, at a far  gentler price...  The predominant Cabernet warrants serious meat dishes like lamb, beef and game, while the hint of Merlot allows for slightly lighter fare, prepared robustly.  For a crowd, this Faust is fantastic with a coffee- and pepper-rubbed rib roast.  Serve it with a creamy potato gratin and sauteed spinach and the diner delight will follow naturally.  Pan-fried lamb chops with a dark mushroom polenta will showcase the earthy, cedar notes of this luscious Napa Valley Cab.  If you're in the mood for something a bit lighter, we love the rich character of this Faust Cab with pepper-crusted, grilled tuna.  Pour another generous glass and enjoy it with a room temperature fresh mozarella; you will be surprised at how well the two complement one another.  If you prefer the sweeter option, that same glass will be perfect with bite-sized milk chocolate cups filled with dark chocolate mousse.  Hooray for Cabernet!
