Wired For Wine:  This  Geyser Peak Alexander Valley Cabernet Sauvignon will delight you no end as its intense and lively flavors build towards a memorably long, lingering finish.  The bold pairing possibilities for this half bottle are almost endless, and will allow you to craft a fantastic meal, with just the right wine for each and every course.  If you are starting with this luscious Alexander Valley Cab, we say pour a generous glass and surrender to it with a platter of your favorite antipasti.  We love this lush Geyser Peak with roasted red peppers and hard Italian salami.  If you're going a little less casual, we recommend this Cabernet with a rich pasta first course dressed with chicken livers, sage and fresh tomato.  The forward fruit and graceful tannins of this elegant Geyser Peak's Cabernet side require meaty pairings like lamb, beef and steak, while the other grapes allow for some slightly lighter fare such as duck.  If you're opening this split with your entree, we think the gentle oak and tannins of this Geyser Peak warrant a grilled Black Angus rib eye rubbed with porcini mushrooms, served with sinfully delicious garlic fries.  The spice in this California red brings out the best in thinly sliced lamb paillard with shaved Parmesan, grilled onions, eggplant, and mint pesto piled on top.  If you're saving it for dessert, have the bottle ready and then decide whether it's going to be sweet or savory.   Sweet says a decadent bittersweet chocolate pudding is the perfect companion for your last glass or two.  Savory and we say this Cabernet should be next to a ripe French Camembert.  Whatever you decide, call the fire department winelovers, because this is one hot red!!
