Wired For Wine:  Really get the party off and running when you open your first bottle of Glen Carlou Chardonnay and offer generous glasses with foie gras pate,toasted pistachios and shaved fennel on raisin toast.  You won't believe how the oak and nutty butterscotch explodes in your mouth!  As for the entree, the ripe apple and citrus, gorgeous acidity, oak and crisp, fresh finish of the South African Chardonnay marries well with chicken, fish, seafood, salads and more.  The lovely acidity of this Glen Carlou is perfect opposite a creamy crab risotto with smoked bacon and leeks.  A bit less time-consuming would be pan-roasted chicken breasts with a  warm rosemary vinaigrette and potatoes your favorite way.  To show off the citrus in this light gold nectar, we say grill a whole branzino and  serve it with roasted jerusalem artichokes and a lemon oregano jam to die for.  This is not going to be an easy choice, but nothing worth doing ever is...  After you've made it, though, and most certainly enjoyed it, open another bottle to go with a potent French Epoisse cheese.  It's spoonable, silky and absolutely addictive with warm, crusty bread.  Who's hungry??
