Winery:  "This wine is a unique blend of classic red cultivars.  Two years maturation in new and second-fill French oak barriques followed by minimal fining has produced a great wine with excellent potential for maturation. 

Colour:  Brilliant ruby red with a purple rim.
Aroma:  Dark berry fruit and Christmas cake with some cedar wood undertones and cinnamon.
Flavour:  Very round and soft with nice ripe tannins, some liquorice and cured cherries.
Finish:  Mouth feel very long and elegant with a nice creamy chocolate flavour."
    Wired for Wine:  Just delicious.  With just under half Cabernet, this wine will start the meal like a pro next to a full flavored cheese like Cashel Blue.  Ever had it with lavender honey drizzled on it?  You won't soon forget it if you do...  If you make it past the cheese course, your options are almost endless.  The Merlot side of this delicious blend allows it to work well with less powerful but still hearty meats.  Duck and pork are good options, along with the tried-and-true lamb, beef and steak which traditionally accompany a Cabernet.  Because of the lovely fruit and cinnamon tones of this wine, we suggest grilling your meat.  The sharp hit of that charred edge of grilled steak or duck will balance these fruity notes beautifully.  Does anybody else keep a jacket in the kitchen for grilling outside when it's below 30 degrees?!  Make good use of this luscious Glen Carlou; hopefully it will warm you...
