"The 2004 Mount Edelstone is 100% Shiraz aged for 18 months in 80% new French oak. Purple-colored, fragrant and complex aromatically with notes of toasty oak, tar, licorice, bacon, and blueberry, the wine is rich and mouth-filling with enough structure for 8-10 years of evolution in the bottle. Winemaker:  Deep crimson in colour. Sweet ripe plum, anise and blueberry aromas with earthy/dusty hints, gentle ferny characters, spicy cedary oak and eucalyptus. Sweet, juicy and ripe on the palate with a fleshy texture, good structure and depth, firm ripe tannins and a long rich finish."

Wired For Wine:  This rock star Shiraz pairs gorgeously with a variety of grilled meats, namely steak, duck, tuna, sausage and venison.  Barbecued spareribs won't disappoint either.  If meat isn't on the menu, mushrooms love a good Shiraz like the Henschke, as do aged or hard cheeses like Gouda, Parmesan or Pecorino.  Let's eat!
