Wired For Wine:  This Hess Allomi Vineyard Sauvignon Blanc is outstandingly food friendly, so we suggest you pour a cool glass and enjoy it as an apéritif while you plan your menu.  If you'd like a little something to nibble on, enjoy that chilled glass with an irresistible French Bijou, a subtly tangy goat cheese. The vibrant, fresh and varied fruit and lively acidity of this Hess Sauvignon Blanc is the ideal pairing with fresh seafood and fowl.  Because it is also a fine accompaniment to vegetables and greens, we suggest starting your meal with salad composé topped with goat cheese and the vinaigrette of your choice.  The lovely acidity of this Allomi Sauvignon Blanc is the perfect foil for garlicky, buttery shrimp scampi.  Serve it on a bed of rice, or with some crusty, fresh bread to soak up the sinfully delicious sauce.  Then, sauté up some asparagus in extra virgin olive oil and, after they are nicely browned, sprinkle with fine sea salt.  Chicken is wonderful with this Hess white, and we love it with one of our all-time favorite summer comfort food meals: a giant platter of buttermilk fried chicken, grilled corn, and a creamy potato salad with lots of fresh chives.  If you're able to tolerate any more delight, we think the fruit notes in this Napa Sauvignon Blanc couldn't get any better unless they were paired with a peach/plum compote topped with a generous scoop of luscious vanilla ice cream.  You did get enough to go with dessert, didn't you??
