Prüm’s wines are famous for their elegance, clarity and expressive, complex character, and for their ageability.  Don't worry, if you have you work up the nerve to try it, there's plenty of time; this wine will cellar beautifully for decades to come, becoming more impressive as time goes by.  What are you waiting for winelovers?!  Get in the game!!  If you're ready to sample it now, you might want to sit down for your first taste of impressive brilliance and remarkable harmony.  Open your first gently chilled bottle and serve it with spicy shrimp and salmon cakes next to a mango puree.  The fresh, rich fruit in this Wehlener Sonnenuhr will gracefully complement the delicious mix of spiciness and sweetness.  Unglaublich!  As for the entree,  Master Sommelier Alan Murray feels that "Riesling is the greatest wine varietal."  It can marry with everything from chicken, pork and fish, to cheese and desserts.  Asian food, especially on the spicy side is our favorite with this remarkable Auslese.  Bring out heaping bowls of shrimp Pad Thai with some heat to it, and watch it all disappear.  Red curry chicken kababs with a minty yogurt sauce will work very nicely too.  Stuffed, roasted pork loin with an apple Riesling sauce on the side is another great choice.  The caramelization on the meat which results from the roasting process will bring out the vanilla cream and pure fruit in this German white perfectly.  If you're not cooking tonight, Tex-Mex takeout with cilantro is yet another option.  The unique interplay between fruitiness, minerality and acidity allows you to continue enjoying this stunning Riesling with a sweet or savory ending to your meal.  We suggest a zesty Spanish Ibores cheese and its lingering tanginess as a companion to the terrific acidity of this Prüm.  If it's sweet you want, how about a spectacular tarte tatin, perfectly cooked in just the right amount of butter and brown sugar.  Holen Sie sich in der Riesling-Spiel, winelovers!
