Wired For Wine:  The concentrated, opulent nature of the Jackson Hills Knights Valley Cabernet Sauvignon will win you over at your first sip of dramatically dark berry fruit, toast and spice.  Pour a generous glass and surrender to it with a platter of your favorite antipasti.  We love this lush Sonoma Cabernet with roasted red peppers and hard Italian salami. As for the next phase of the meal, this Jackson Hills pairs best with robust meat dishes such as lamb, beef and some game.  The spice in this California red brings out the best in a lamb paillard sandwich with shaved Parmesan, grilled onions and eggplant, and mint pesto.  Be sure and use a crusty fresh bread.  The lovely tannins in this luscious red will showcase a T-bone steak grilled just the way you like it.  We highly recommend pressing coarsely grated black pepper and sea salt into both sides of the steak before cooking.  A heady wild mushroom risotto next to that steak will engage the earthy side of this Jackson Hills Cabernet.
