Winery: "Our 2006 Cabernet Sauvignon reflects not only the qualities of an exceptional vintage, but also an elevated essence of Cabernet fruit due to strategic vineyard sourcing and extended bottle aging. Concentrated, lovely black fruit aromas of blackberry, blueberry and cassis. The mouthfeel is luscious and full with continued flavors of blackberry, cassis, black cherry with a suggestion of vanilla, coconut and cedar. The soft, round tannins and understated acidity of this wine complement the bright fruit characters to create a balanced Cabernet Sauvignon approachable now or worthy of cellaring for at least 10–15 years. The ideal serving temperature for our Cabernet Sauvignon is between 60 and 65 degrees."

It is a smooth, supple red with deep, dark fruit, whispers of oak, lovely soft tannins and elegantly subtle acidity which are exquisitely woven into a truly gorgeous Alexander Valley Cab. Did someone say holiday table?... Open your first bottle and offer it with strips of hoisin-glazed pork shoulder perched on top of crisp wonton skins. The Asian flavorings and gentle spice will open the brilliant fruit in this Jordan Cabernet even more. Moving along to the entree, this California Cab will pair best with lamb, beef, other meats and some game birds. If you'd like to bring out the tannins, why not do a simple study in bitterness and grill up some Japanese eggplant with radicchio and endive? You could pair it with lemon-thyme marinated, grilled cornish hens. Put some corn pudding under slices of your favorite grilled steak and then top them with coarsely chopped tomatoes. You won't be sorry you did. On the easier side, simply grilled leg of lamb with ratatouille will satisfy nicely too. Take a moment and then open another bottle.
