Winery:  "The 2007 had a steely intensity that the 2008 does not have.  In its place is a somewhat more gentle quality, still with plenty of the citrusy/minerally/spicy quality that seems to be definitive of the vineyard but with a mouthfeel that is, well, softer.  I think it will probably open up quickly.  Like always, Cariblanco strikes me as having one foot in the new world, with its vibrant fruitiness, and one foot in the old world, with the minerally and waxy notes, somewhat reminiscent of Sancerre."

Wired For Wine:  Our temps are going into the 70's today, so we already have several bottles of this Kingston Family Vineyards Cariblanco Sauvignon Blanc chilling...  The value pricing is terrific, and its crisp, lively nature makes it a natural with countless appetizers.  We suggest crab-and-pork spring rolls with a sweet/tangy dipping sauce with your first bottle.  Seafood, shellfish and lighter meats will all pair well with the great acidity, enticing citrus, subtle spice and mineral notes, as will fresh herbs, salads, and many vegetables.  Try it with grilled jumbo shrimp with a lemon/ginger glaze over fluffy jasmine rice.  Simply grilled pork tenderloin next to grilled asparagus with gorgonzola butter is another great option with this Cariblanco.  The great cut of acidity of this Kingston white is perfect opposite a decadent choice like salt-and-pepper buttermilk fried chicken with your favorite sides.  ¿Cómo vas a decidir?  Open another bottle and serve it with a delicious American Catskill goat cheese for the finale of the meal.  It boasts a beautiful fresh flavor which is enhanced by the soft, luscious rind, making it ideal for this Casablanca Valley blanco.  ¡Vamos winelovers!
