Las Rocas is going to pair well with a range of food, so rustle up a host of small plates. We like some chorizo next to pickled peppers, Iberico or Serrano ham sliced thinly, and lightly fried calamari. Make sure you support your local farmer and pick up whatever vegetables are looking particularly fine. Prepare them your favorite way, or a simple sauté in olive oil would do just fine. Don't forget: no self-respecting tapas menu would be complete without an assortment of great olives and Marcona almonds. For a final course, the tanginess of goat cheese will pair well with the pleasant acidity of the Las Rocas.
