After you've whet your appetites, we suggest roast duck with sausage and lentils. To play up hints of spice and oak, a great choice is Korean short ribs wtih sesame oil, soy sauce, onions and garlic. Delicioso. This smooth red works well with rich pastas too. We love it with pappardelle served with a tomato-based lamb ragout.
