Wired For Wine:
  This big, rich, crisp Sauvignon Blanc is fantastic with countless choices on the lighter side of meat and fish.  It is great with vegetables and herbs as well.  It shines at the beginning of a meal because it is the perfect vehicle to take while progressing from light to slightly heavier choices.  We suggest starting with a chilled glass and a French Bijou, a subtly tangy goat cheese which is irresistable.  Because the Mayacamas is so delicious with vegetables, it is a great partner for soups.  One of our favorites is a velvety, fresh carrot soup to start off a winter meal.  A simpler beginning to the meal would be a tossed salad with the vinaigrette of your choice.  Chicken is wonderful with the Mayacamas, so we might do stuffed, boneless chicken legs.  Another great choice with this Sauvignon Blanc is white fish or shellfish.  A surefire winner will always be a buttery shrimp scampi.  The clean crispness of the Mayacamas will counter the richness of the shrimp beautifully.  And finally, we love this Sauvignon Blanc with stone or tree fruit desserts.  For this meal, we think the final note should be a red and yellow plum compote.  Pour a glass and offer a simple vanilla or a wildflower honey ice cream on the side.  Heaven.
