Wired For Wine:  Ay caramba!  That's what we said after our first sip of this Morgadío Albariño.  Its lively, graceful, concentrated nature make it a terrific aperitif on its own, or if you're craving a nosh, we suggest battered "goujons" of sole with smoked paprika salt.  Just delicious.  The vivid acidity, perfect degree of minerality, citrus and apple notes of this intensely clean Spanish white make it ideal for seafood, white fish, raw oysters, and chicken.  Grilled octopus your favorite way is a spectacular and typical Spanish pairing.  The lemon zest and lime in this Albariño will shine with a big platter of Basque lemon shrimp with garlic, cayenne, anchovies and sherry vinegar.  If you're in the mood for a creature of the land, the great structure of this Morgadío will only serve to enhance Spanish chicken with fennel, saffron and tomatoes.  Pull another bottle from the fridge and serve it with a mild cheddar.  Its tang will match the cut and gentle chalk of this Rías Baixas white beautifully.  "¡Olé baby!"
