Wired For Wine:   "Impossible to resist"?  A Tuscan Chianti?  We're in!  This Giacomo Mori Chianti is ready to drink, so don't delay.  Open your first bottle and be generous.  Marinated, frilled eggplant and mint bruschetta will be the perfect pairing to get the meal off and running.  The stupendous red fruit, floral and spice hints, fresh character, medium body and gentle earthiness of this Chianti combine beautifully to make it a great choice with pasta and simple sauces, grilled meats, braised chicken, sausage, mushrooms and more.  The rustic side of this Tuscan red is lovely with grilled veal chops with shallots, tomatoes and olive jus.  To access the pure fruit of this Giacomo Mori, it has to be chicken cacciatore.  If you're craving pasta, we recommend pappardelle with portobello, spinach, grape tomatoes and pine nuts.  Stordimento!  Round out the evening with another bottle or two, and an Italian Bianco Sardo di Moliterno cheese.  It's earthy, sweet and nutty, and made for this crushingly delicious Tuscan Chianti.  Mangiamo, winelovers!
