Wired For Wine:    When was the last time you had an Orvieto?  That's what we thought...  The Palazzone Terre Vineate Orvieto Classico is the perfect vehicle to drive you out of your wine rut.  It is an energetic, clean, intense and refreshingly dry white which is ideal for everthing from cheese to seafood lasagna, to a spinach and arugala white pizza.  It loves a good antipasto, so we suggest enjoying your first bottle with juicy, ripe canteloupe and the lovely salt of thinly-sliced prosciutto. Sono in paradiso?  The mineral notes, firm, bright fruit, gorgeous aromas and whisper of hazelnuts make this Orvieto Classico ideal for fish, seafood, many pasta dishes and even pork.  Our first choice is linguine alla vongole, or linguine with clam sauce.  We prefer the white, but this Palazzone does beautifully with the red one too.  If you're in the mood for something a little more meaty, try it with sausage-stuffed rack of pork with sage.  Spicy grilled tuna with a garden salsa won't disappoint either, or whole branzino cooked in a salt crust just like in Italy...  You should provide another course, and we say make it a good quality Parmesan, cubed.  Not a bad ending at all...
