Winery:   "Our 2005 Napa Valley Cabernet Sauvignon was crafted from hand-selected Napa Valley fruit. After harvest, the fruit spent extended maceration time on the skins for deeper color and flavor components. It was then aged 18 months in 40% new French and American Oak. The wine is 81% Cabernet Sauvignon, 16% Merlot and 3% Petit Verdot from our organically farmed Rutherford Vineyard and sustainably farmed Persephone Vineyard.

Our 2005 vintage reveals a lovely nose with aromas of dark black cherry, bittersweet chocolate and hints of bay leaf. On the palate, the dark garnet wine is rich and concentrated with layers of plum, holiday spice, tobacco and dark cocoa. Velvety tannins provide a long, memorable finish."

Wired For Wine:  Deep, dark and lush is what we think of this delicious Peju Napa Valley Cabernet Sauvignon.  The Cabernet guarantees a big hit with meaty standards such as lamb and other hearty meats.  Its Merlot facet allows it to work with ever-so-slightly lighter fare like some pastas or chicken in robust sauces.  Pour a glass and sit down with some bite-sized sausage and eggplant pizzas while you ponder the possibilities.  If you're a fan of the classics, grill some filet mignons your favorite way and serve them with a Gorgonzola-walnut risotto. The earthy side of this Cabernet will come alive with this choice.  Along this same classic route is a meat lasagna.  The tomato sauce will awaken the luscious fruit in this dark garnet gem.  We also love this Peju with yogurt-marinated lamb kebabs.  If you don't do the risotto, a great way to wind down the meal is to enjoy another glass of this Napa Valley treat with a room temperature Gorgonzola and some walnut bread.  If your sweet tooth is calling you, dazzle the diners with a wickedly tempting molten bittersweet s'mores cake...  Sign me up for the cake!
