Winery:  "Nuances liqueur and ripe black fruit (jam) deep and complex fragrances, mineral, toasty notes. In the mouth, good structure, balanced acidity, round tannins and a long, persistent finish.  This wine is made from our oldest vineyards of Grenache and Carignan with a mean age of 70 years, with a small proportion of our Cabernet Sauvignon vineyards, all with a very low production and planted on terraces of slate licorella that gives it its special taste mineral."

Wired For Wine:  In the mood for an intensely good, complex Spanish red?  The Pissarres is just the thing for you.  Open a bottle and luxuriate in your first glass with some jamón Ibérico and Spanish olives.  There salty tang is the ideal counter balance to the rich lush fruit in the Costers del Priorat Pissarres.  The full body, complexity, beautiful tannins and array of dark fruit, spice, toast and smoke make this powerful Priorat a terrific companion for meat and game cooked anyway.  Nothing delicate though.  The classic dish in the region is paella made with fideo noodles.  Try a version made with game, duck, quail, or rabbit.  A simple but equally delicious choice is grilled rack of lamb with a salt, pepper, and cumin rub.  We can't get enough of the Spanish influence so you might want to try a Cazuela (cassarole) of duck confit, snails, and aioli.  Sólo espera a que lo pruebe.  After the main course is done, take advantage of the long, lasting finish of this stunning Spanish red with a Catalonian Nevat goat cheese.  It is tasteful, sweet and a bit tangy and the perfect ending to this meal.  Olé baby!
