Winery: "This Sauvignon Blanc has brilliant pale yellow color with almond hints. This wine is very expressive and fruity; with mainly lemon, grapefruit and white peach notes. There is a rich, fat and fresh mouthfeel as well as beautiful aromatic complexity. One finds peach and lemon then it turns to a rich finalé of pineapple and black currants. Since it is essential to avoid any oxidation during the pre-fermentary phase in which the aromas first emerge, particular care goes into maintaining the quality and character of the Sauvignon grapes as they are transported to the winery. In order to strengthen the aromatic potential and flesh of the wine, modern vinification methods are used. Skins are macerated for 10 hours at 12°C. After a pneumatic pressing, the must is left to settle in stainless steel vats for 48 hours before the alcoholic fermentation is carried out under a controlled temperature of 16 to 19°C. The wine is then kept on the fine lees until filtration prior to bottling."
