The rich dark fruit, smoke, spice, light pepper, and earthiness which lead to a beautifully long finish allow this Raymond to pair well with most any meats, lamb in particular, robust cheeses, earthy spices and a whole lot more. Grill some gorgeous cuts of well-marbled steak and top with gorgonzola butter. Be sure to have enough chairs in case of swooning... A more casual choice, but equally delicious is peppered lamb burgers with "hot" tomato jam. The jam will bring out the fruit of this Family Classic. Roasted prime rib with an orange balsamic glaze is perfect for a crowd.
