Although fully dry, it has wildly ripe, sweet flavors of black cherries and cassis, accented with caramelized oak. Winery:  "This dense, dark Cabernet opens with the fresh aromas of blueberries with overtones of roasted meats, cigars, and the forest floor. On the palate, the wine is full-bodied and powerful as minerality and earthiness intermingle with the sweetness of elderberry and currants. This wine is evenly structured and well balanced with a beautifully extended finish. A wine to pair with heartier meats including grilled rib eye steak with mushrooms or herb roasted rack of lamb. While delicious at any early age, this wine has the potential to be cellared for 10-15 years past the vintage date."

Wired For Wine: This Raymond Rutherford Cabernet is regal in its complex and powerful nature; cook accordingly. It works beautifully with hearty meats such as lamb, beef, game and game birds. One of our top choices is a grilled rib-eye with with a side of cacio é pepe pasta. This simple pasta dish with olive oil, cracked black pepper and Pecorino cheese is perfect opposite the wildly ripe dark berry flavors of this Raymond. Or, for a nod to the earthy, cigar and oak side of this California Cabernet, we recommend braising lamb shanks with thyme until the meat is melting from the bone. Put them on top of Italian mashed potatoes with Parmesan cheese and dive in. When it's almost all said and done, pour another glass of this dense, dark Napa Cab and enjoy it with a Spanish La Peral cheese. Made with cow's milk and sheep's cream, it resembles Gorgonzola and has a nice olive flavor and a pungent aroma which will make you feel like royalty.  Put on your crowns and pour a glass winelovers!!
