Wired For Wine:  Rubicon Estate Niebaum-Coppola 'Rubicon'.  Need we say more?  This is one for the cellar, winelovers.  Whose big anniversary is in 5 years or more?  Graduation?  First baby?  This newest vintage of the Rubicon Estate's flagship wine will add luster to any occasion, and the longer you can wait to open it, the greater your reward.  When that day comes, we think that your first glass might not need food for company, its decadent opulence easily enjoyed solo.  A platter of grilled figs stuffed with pancetta and blue cheese wouldn't hurt, though...  When deciding what to have for your main course, keep in mind that the rich texture, notes of toasty, tobacco-y earth, lusciously ripe dark berry fruits, spices and gorgeous tannins of this Rubicon all require sturdy meat choices such as lamb, beef and game.  For a crowd, you can't go wrong with tapenade-stuffed log of lamb.  Roast pheasant with apricots and dates will bring out the lovely caramelization and fruit in this Bordeaux-style red, while a grilled beef tenderloin with red wine and marrow sauce will adequately acknowledge the delectable decadence and full body of this wine.  A fitting last course which will match the powerful personality of this Niebaum-Coppola would be a French Roquefort cheese.  It will be one thing: memorable.
