The sumptuous black fruits of this Santa Carolina Reserva de Familia Malbec are perfect for the sweet/salt combination provided by a platter of Serrano (ham)chips with quince jam and slivers of Manchego cheese. Moving things right along, the incense, assorted sweet and savory spices, velvety tannins and mesmerizing texture of this Chilean red will warrant red meats, pizza, sausage and lots more. If there's a chill in the air like ours, our first choice is a heavenly lasagna with ground lamb, layered with a rich porcini/tomato sauce. The aroma which comes from the oven while it's cooking is almost too much to bear... Be sure and make enough of those Serrano chips... If you want to highlight the lovely, round tannins in this Santa Carolina, fire up the grill and serve sizzling beef fajitas. Estoy listo. And, if you'd like another choice for slow cooking in the oven, we suggest a traditional cassoulet with white beans, sausage, and duck. Fill everyones' glasses and serve a room temperature Cashel Blue cheese drizzled with lavender honey for the finale. It will bring out the fruit and violet nuances in this Reserva Malbec, and if anybody at the table is a Marine, a hearty OO-RAH too!
