Wired For Wine: Stock up winelovers, because this tasty Chilean Chardonnay is an incredible value...The Santa Ema Reserve Chadonnay is superbly expressive and bursting with flavor while possessing a lovely acidity and terrific balance; so we say bring on the seafood, white meats and ripe cheeses. Pour your first cool glass and dive into a big platter of fritto misto di pesce, fried seafood with lemon and sea salt. Crab, white fish, lobster and scallops will make this wine sing. Salmon too. Pair them with butter or cream sauces. Crab cakes with a mustard aioli or broiled lobster with warm lemon butter for dipping will do the trick. Another favorite with this Reserve Chardonnay is seared sea scallops on a bed of creamy polenta, garnished with julienned, crisp leeks. On the simpler side, we love this Reserve Chardonnay with roast chicken. Serve it with a gremolata of lemon and orange zest with parsley, and some polenta with ricotta and parmesan on the side. After the table has been cleared, open another bottle and savor it with a heavenly French Charolais goat cheese. The slightly tart flavor and its chalky texture are perfect for the hints of vanilla in this fresh Santa Ema.
