Wired For Wine:  This Schweiger Estate Cabernet Sauvignon is the perfect vehicle to help you hop on the train to hearty.  You'll want the elastic waistband for this rich, velvety red...  It is beautiful with lamb, meat and game.  Traditionally we would choose a lamb dish, but the fresh snow on the ground this morning makes us more in the mood to try something a little different than our standard choice.  Start with a dish of pappardelle pasta with a Chianti and wild boar ragout.  Or, because this Napa Cab is terrific with mushrooms, how about some garganelli pasta with funghi trifolati, truffled mushrooms.  If you can manage to restrain yourselves with appetizer portions of the pasta, then let the Schweiger's full body and sweet suppleness play up a generous serving of rabbit with tiny brussel sprouts, parsnips, pancetta and carrot vinaigrette.  The vinaigrette is the real gem that makes this dish.  If you prefer a less game-oriented entree, the red fruit in this Estate Cabernet is great with a grilled ribeye steak done your favorite way, served with roasted potatoes and greens with roasted shallot drizzled with balsamico.  Heaven.  Since the options we've suggested are all on the robust side, pour your last glass or two and enjoy it with a refreshing pistachio and dark chocolate semifreddo.  All aboard!!
