Winery:  "Sundawg Ridge produces wines with a wide spectrum of rich aromas and flavors: wild berry, Bing cherry, cranberry, sweet spice and earthiness. This medium-bodied, layered wine has soft tannins, bright acidity and a lingering finish. 

Pinot Noir specialist James MacPhail has complete control over the creation of Sequana�s single vineyard wines. Grapes were hand-picked and hand-sorted, then cold-soaked prior to fermentation to maximize flavor and color extraction.  In small open-topped tanks, each block was fermented separately, using primarily native yeast. Other lots were fermented with yeast strains unique to each individual lot. Hand punch-downs extracted and elevated the Pinot Noir flavors and the wine was aged sur lie in French oak barrels for 11 months.  James MacPhail focuses on gentle and traditional winemaking techniques."

"Gorgeous, seductive and brilliant".  If you haven't found it in a man or a woman yet, then the fabulous consolation here is that you can have it in this truly memorable Sequana bottle which has been personally nurtured by Pinot master James MacPhail.  The Sundawg Vineyard Pinot is impeccable in it's versatility with different food choices.  Duck, salmon and other medium-bodied fish, chicken, and lamb will all go beautifully with this Wine Enthusiast favorite, as will veal chops and pork loin.  The firm acidity of this Napa diva stands up very nicely to a good French chevre cheese so you might consider starting the meal with a roast beet and chevre terrine.  Vegetables and earthier flavors pick up perfectly on this Pinot's earthiness.  Another good starter would be fresh linguine with a red mushroom sauce. If you've never had miso-marinated black cod before, try it with this Pinot superstar.  Drizzle the cod with a soy lemongrass ginger sauce.  Asian sauces and dishes with sweet-salt combinations are terrific vehicles for picking up the "eruptive" fruits in this wine.  A more traditional route would be marinated lamb shish kebabs with Cippoline onions and grape tomatoes on the skewer, or simple grilled veal chops sprinkled with sea salt and freshly ground white pepper.  The nobility of the Sequana is such that we would bring the meal to a close with a glass all by itself.  Enjoy its dry, silky nature as you revel in the lingering finish; there aren't many out there like this one winelovers...
