Wired For Wine:  Hang onto your goblets, winelovers,  Tenute Silvio Nardi is sending in its Brunello di Montalcino.  Ciao bellissima!   The elegance and well-orchestrated body of this Brunello  allows is to be paired with very structured and complex beef and lamb dishes, pastas with simple sauces, as well as earthy mushrooms and truffles.  One of our favorite hors d'oeuvres with this delicious red is a tapenade of wild mushrooms on slices of toasted rustic bread.  Savor them as this Silvio Nardi opens in your glass.  A hearty beef stew with a tomato-based sauce which incorporates roasted bell peppers will bring out the lovely fruit in this intense Italian.  On the simpler side, grilled lamb chops, steak and veal chops will go perfectly with the supple tannins.  A robust pasta bolognaise couldn't hurt either.  After all the heavy fork-lifting has been done, pour just one more glass (or two), and delight in a robust Pecorino Toscano cheese.  Perfetto!
