Wired For Wine:  You'll have just one word for us after your first sip of this fine, fresh Simmonet-Febvre Chablis: merci!  Otherwise known as a Chardonnay, or white Burgundy,  its mineral notes will match wonderfully with a tray of oysters on the half shell.  We like ours with a tangy shallot mignonette.  This French white is aged in stainless steel only, so no oak flavors here winelovers.  The plentiful melon, apple and citrus notes, floral aromas and lively elegance of this Simmonet-Febvre will match up with white fish, shellfish, and chicken alike.  If you're putting on the Ritz a bit, make it poached salmon with truffles and shrimp in a luxe cream sauce.  If you're doing takeout or going to your favorite sushi BYO, then we suggest an assortment of scallop, yellowtail and unagi (the most smokey, delicious grilled eel ever) sushi.  Make sure you bring enough...  If you want an excuse to stand around for a while sipping another glass after the oysters, then stir up a pot of shrimp and chive risotto.  You will need to have another course, and we think not much could be better with this perfectly balanced Chablis then an American Cypress Grove Humboldt Fog chevre cheese.  Il sera tellement délicieux!
