Wired For Wine:   From Burgundy we've brought you this beautifully balanced Simonnet-Febvre Vaillons Chablis Premier Cru.  It will make you want to get your warm weather, appetizers and seafood ON, winelovers!  Swish it around in a chilly ice bucket before you open it, and then luxuriate in your first glass with a platter of Malpeque oysters with a shallot mignonette.  Donc, tellement délicieux.  The briny side of this crisp French white is made for all creatures of the sea.  As for the entree, the refreshing notes of apple and citrus, mouthwatering minerality, intense nature and looooong finish of this Simonnet-Febvre will all go fabulously with white fish, shellfish, chicken and more.  One of our top choices is grilled chicken and shrimp kebabs with lemon and garlic.  The purity of this Vaillons is lovely with butter sauces, so we suggest a French classic: sole Meunière.  And if you're feeling like some deluxe comfort food, we say there is nothing like a lobster pot pie.  Its creamy filling will be perfect opposite the brine and lemon of this Premier Cru.  Finally, we have the perfect excuse for opening another bottle: a French Petite Mothais goat cheese.  It sits on a chestnut leaf, and will wrap up the meal like a pro as the finish of the Chablis goes on and on...  Eh bien, qu'est-ce que vous attendez?!
