It is a rare and unforgettable wine.  Don't miss out winelovers!  You can easily wait for a special occasion sometime in the next decade or so, or dive right in and pry open your first bottle.  Allow it to breathe for a while before your first sip, and prepare for greatness.  We suggest a platter of beef carpaccio with figs, comte cheese, a drizzle of black olive oil and a sprinkling of fine sea salt.  Let the seduction begin... The pure and prominent rich, dark fruit, spice, fiesty tannins, intense personality and full body of this Staglin prize make it a natural with beef, game and lamb.  Our favorite is grilled rib lamb chops accompanied by sweet garlic, smoked eggplant and a corn and roasted tomato confit.  The tannins and cedar nuances will thank you.  If you prefer the classic route of beef with this Margaux-like Cab, we say do a duet.  Red wine braised short rib with parsnip-potato gratin, next to a bit of seared rib-eye dressed with gorgonzola cream.  The perfect proportions and layers of this Estate Cabernet will work beautifully with this beef combination.  And if game is what you're in the mood for, we recommend a roasted loin of venison with acorn squash, chestnuts and smoked black pepper.  Just heaven.  You will be looking for excuses to open another bottle and we've got one: a room temperature, ripe, robust Camembert de Normandy.  It's not for the faint of heart, but it will be outstanding with this Staglin stunner.  Talk about a happy ending...
