Round and spicy but not yet filled in, with smoke, flint and fusel qualities currently dominating pineapple fruit. Soft, broad and fairly dry Chenin Blanc with good texture. Set out a tubful of ice water with several bottles in it, and sit back and sip with bite-sized salmon cakes and a shallot-mayonnaise dipping sauce. The lovely combination of smoke, mineral, tropical fruit, and lively zest of this beautifully textured, complex Chenin Blanc allows it to pair with everything from chicken and seafood to salads and vegetables alike. Our hands down favorite is a mix of shrimp and veggie tempura. The refreshing nature of this Teddy Hall is perfect with fried foods. If you're doing takeout and want to honor the spice in the wine, we think a dish of Chinese chicken and eggplant in a spicy garlic sauce is just what you're looking for. A lighter dish which will bring out the soft fruit in this wickedly good white is a crab, mango and avocado salad with citrus dressing. We're not sure how you will ever decide... After the main course is done, refill the glasses and bring out a French Selles-Sur-Cher cheese. It's milky, creamy and has amazing hints of citrus. What are you waiting for??!
