Wired For Wine: If Robert Parker, Jr.'s establishment thinks this Tenuta di Sesta Brunello di Montalcino is "totally delicious and hugely enjoyable", who are we to argue? We had to put on the warm slippers this morning, which reminded us that this ravishing red is perfect for slow-cooked foods. Take advantage of the chill in the air, and the fact that all of the wrapping and shopping is done, and think of stewed game, roasted game birds, lamb chops, simple pork roasts, braised meats, risottos with meats, and lots more which will pair fantastically with this Brunello. While you ponder the possibilities, pour a deep red glass and enjoy it with thin skewers of lamb "satay" and a creamy pesto dipping sauce. The complexity of the Tenuta di Sesta means that it will hold its own next to a rich sauce which has developed over hours of braising or simmering. Our choice: red wine beef stew. If you're looking for a quicker meal, a grilled, aged steak is a great choice, or a pasta with a meat sauce. How about a hearty duck ragout? This Brunello pairs famously with aged Parmesan and Pecorino cheeses, so if you go for the grilled steak, make it an unforgettable meal with a little risotto Milanese on the side. A little more time is involved, but the touch of saffron, and more importantly the Parmesan are worth every minute. Andiamo a mangiare!
