Wired For Wine:  These may be the lazy days of summer, but there is nothing lazy about this luscious, vibrant, zesty Tolosa Paso Robles Cabernet Sauvignon.  Open your first bottle and serve it with a platter of lamb, tomato, shallot kebab.  There must be a mint dippy sauce on the side...  The rich dark fruit, spice, toast and sweet oak of this Paso Robles Cab require meaty fare such as lamb and beef, while the other grapes allow for slight lighter fare such as duck and hardy salmon dishes.  Flaunt convention with a duck Bolognese over rigatoni.  It will access the earthy, smokey side of this Tolosa red.  If convention is your bag, we recommend braised short ribs with horseradish spaetzle, the spice of this California red blend is perfect for it.  Saute sweetbreads with morels will bring out the lovely layers of tobacco and cedar as you approach the long velvety finish.  If you have room, break out a ripe Camembert with one last bottle.  Get your delicious on, winelovers!
