Wired For Wine:   The powerful and smooth mouth of the Whitehall Lane demands a bold, meaty meal.  Beef, lamb and game will all fit the bill.  We're contemplating a whole beef tenderloin roasted in the oven or done on the grill.  The secret is to marinate it for a minimum of 24 hours so that the flavor really sinks in.  Pair it with a creamy Gorgonzola risotto sprinkled with toasted walnuts and listen for the murmurs of delight.  Roast lamb with a Moroccan couscous would be perfect too.   Your favorite vegetable dishes with eggplant and/or peppers will round out either of these meals beautfully.  After the plates have been cleared, pour another glass and pass the bittersweet chocolate truffles for the coup de grace.  When this meal is over, you'll be ready to settle down for that long winter's nap...
