Winery:  "Wild Oak, the site of our Winery in Sonoma Valley is  named to honor Sonoma�s Heritage Oak trees. Wild Oak wines by St. Francis are made from grapes that have been hand-picked from small lots of elite terroir bordered by Heritage oak trees in Sonoma County�s most outstanding vineyards. Wild Oak Chardonnay is a crisp yet full-bodied Chardonnay that offers plush fruit in a clearly Burgundian context.The blend draws on outstanding sections of vineyards in three diverse parts of Sonoma County, including the St. Francis estate Behler Vineyard in Sonoma Valley.  Approximately half of the grapes are from the Yamakawa Vineyard in the wind-chilled Carneros Sonoma AVA, which lends a high-toned purity and an elegant aroma of fresh Fuji apples. The Chardonnay grown in the Sonoma Valley and Russian River Valley appellations impart the floral overtones and a touch of rich tropical fruit. The finished Chardonnay has a wonderfully creamy texture with butterscotch-vanilla undertones from the use of French oak barrels for aging."

Wired For Wine:  The full body and plush fruit offered by the Wild Oak Chardonnay make it a great platform to show off lots of foods.  Toasted nuts are a great ap�ritif companion.  We make mixed nuts tossed with a bit of salt, brown sugar, and pieces of thick-cut bacon for the holidays, but can't make it through the year without them.  Set them out with a glass of the Wild Oak and plan the next course.  Primarily, we love this Chardonnay with white fish, salmon, seafood and most other creatures from the sea.  We know a lot of people who believe that Chardonnay is at its absolute best when it is paired with butter or cream somehow.  We agree.  Keeping that in mind, we suggest seared halibut with tomatoes, scallions and white wine.  For us, the best part is the butter which is swirled into the sauce at the very end in order to enrich and flavor it.  Delicious.  If you're looking to wow a crowd, try a whole branzino (European sea bass) cooked in a salt crust.  You will be amazed at the tenderness and flavor of the end result.  Not in the mood for fish?  Not to worry; this Chardonnay by St. Francis winery is a natural with chicken.  We love it with Chicken Marbella, which we roast with olives, capers and prunes.  It's marinated overnight, which locks in an unbelievable moistness.  Put it next to a buttery polenta and listen for the murmurs of contentment.  To wrap things up, this wine will go beautifully with a creamy Boucheron cheese.  Toast a few slices of a nice, fresh baguette while it comes to room temperature, and then put the finishing touches of happy on your meal...  Enjoy!
